My mom recently went to a dietician and I told her she needed to tell me everything that they told her. Here is what she said. I figured it would helps others too! Share your dietician tricks if you have any (my insurance will nto cover one).

The booklet I got from the dietician is printed the the American Diabetes Assoc. They have two websites -
http://www.diabetes.org and
http://www.eatright.org you can probably get them to send you the book.
I then have to fill out a daily food diary. SUppose to drink 8 - 8 oz glasses of water every day.
Also - eat
3 - 5 nonestarchy vegetables daily
6 oz lean meat daily
3 servings unsaturated fats (these are considered 1 serving each: 6 almonds, 10 peanuts, 1 1/2 teaspoon of peanut butter)
FREE FOODS:
1/4 cup green beans
1/2 cup cucumber slices
sugar free jello
salad greens
I'm suppose to have 1400 calories a day.
Sample of my meals:
Breakfast 1 package flavored oatmeal, 2 TB raisins 1/2 cup milk, fresh orange, 4 walnut halves
OR two slices whole wheat bread w/1 1/2 tea peanut butter, 1 banana, 1/2 c yogurt
Lunch - sandwich with 3 oz turkey, 1 TB lite mayo, lettuce, 2 slices whole wheat bread, 1 serving vege and 1 serving fruit OR 1 cup soup and protein shake
Dinner 3 oz lean meat, chicken or fish, 2/3 cup rice or pasta or 1 cup potatoes
1 cup green beans or other veggie, salad with lite dressing, fresh fruit
When you get whole wheat bread make sure it's all whole wheat and doesn't have sugar and other yukky stuff in it.
