I made a pasta salad last night that was easy and fairly cheap (with the exception of the edamame). We've been looking for meatless meals that are filling and yummy and this one was a good one (the soy in the edamame is really filling).

1 box Healthy Harvest (or your choice) whole wheat rotini
2 ears fresh sweet corn
1 red bell pepper
1 box shelled edamame
feta cheese (optional)
Fat Free Kraft Italian dressing

I cooked the pasta and corn until done and seared the pepper in a skillet with a tiny bit of butter. When all is cooked, cut the corn off the cob and mix all ingredients in a big bowl with 1/2 bottle of dressing (more or less to taste). Sprinkle top of your individual portion with the feta cheese (I actually liked it better without the cheese). Healthy, cheap, filling, and yummy!!!

What is "edamame" and where do you get it?

endame is soy beans. I have seen them in the produce section (by the organic produce) at Homeland.

I got my endame (thanks for the correct spelling Karen! I knew I had it wrong!! ) at Walmart (produce section). It was a little under $4 for the box.
