Pico de Gallo

Makes: 8 servings, 1 cup
Ingredients:
2 avocados
1 medium onion
2 medium tomatoes
Cilantro
1 jalapeno pepper
Lime
Salt and pepper to taste
Preparation:
Slice avocados in half lengthwise, remove pit and scoop meat of avocado into a bowl.
Add chopped onion, tomatoes, cilantro and jalapeno (if desired) and mix until slightly chunky.
Squeeze juice from 1/2 lime and stir. Add salt and pepper to taste. Serve as a dip, or as a garnish to tacos, burritos, etc.
