 Post subject: My mil's Mexican Rice

Put a little bit of vegtable oil in a pan. Enough to almost cover the bottom.
Pour your rice in. Cover the whole bottom. I just eye ball it.
brown your rice. Stir often to prevent burning.
Once its all brown. Add chopped onion and one clove of garlic or two if you like.
then fill the rest of the pan up with water almost to the top.
take one can of tomato sauce and pour it in going over the whole pan. take a piece of lime and squeeze the juice over the rice.
Add one chicken bouliin cube. (sp?)
stir to combine. Let cook uncovered. DO NOT STIR ANYMORE.
It will be boiling and then eventually run out of water. And its done. You can add some finly chopped cilantro to the top when its almost done also.
Taste the water to make sure you dont need any salt.. before it is all boiled out..
