Super Easy Lentil Soup
3 C lentils 2 med onions 2 – 3 carrots 1 bulb garlic (You can use less, but that's what I use) 2 potatoes 2 – 3 stalks celery 1 jalapeño (optional) lg can of diced tomatoes 1 T olive oil 1 T Cumin seeds 1 t black pepper (use ess if you like) 2 t salt ¼ to ½ C chopped, fresh cilantro
Sort and rinse lentils. Cover with water and bring to a simmer. Chop onions, carrots, celery. (Brown if you like) add to pot and continue to cook, covered. Toast cumin seeds, grind them, and add to frying pan with minced garlic, and olive oil. Cook until golden brown. (about 3 minutes) Add to pot. Add tomatoes, salt and pepper and cook about an hour. Covered. Add chopped potatoes and cook about another hour. Add enough water to make a nice consistency.
Right before serving, add fresh cilantro and simmer another few minutes.
Excellent with garlic bread!
