If your kids have never seen popovers bake, they'll be amazed at how the simple batter dramtically puffs up into such a crisp and delicious treat.
In a medium bowl, whisk 2 large eggs until frothy, then whisk in 1 cup milk and 1 tablespoon veggie oil. Combine 1 cup all-purpose flour and 1/4 teaspoon salt and sift into the liquid, whisking to make a smooth batter. Let the batter rest for 10 minutes. Meanwhile heat the oven to 425 and lightly butter 6 popover cups or 8 muffin cups.
Whisk batter again and pour it into the buttered cups (about 2/3 full) dividing it evenly. Bake for 30 minutes or until tall and dark golden. Do not open the oven before 30 minutes have passed--you can check on them after that. Once they are done, immediately remove them from the oven and use a thin skewer to poke a hole in each one to let out steam. Serve at once. Makes 6 to 8.
