Yellow Split Pea and Ham Soup
3 cans (14.5 oz each) chicken broth 3 cups water 1 bag (16 oz) dried yellow split peas 1 lb smoked ham, cut into 1/2-inch cubes 1 pounds yellow tomatoes, diced 1 1/2 cups diced onion (1/2-inch) 1 1/2 cups diced carrots (1/2-inch) 1 1/2 cups diced turnips (1/2-inch) 2 parsnips, peeled, cut in 1/2-inch dice 1 1/4 cups diced celery 1 1/4 cups fresh or frozen corn kernels 1 Tbsp chopped fresh marjoram 2 bay leaves 1/2 tsp freshly ground black pepper 1 tsp salt Croutons and snipped fresh chives, for garnish
1. In saucepan, bring broth and water to a boil. In a 5-qt or larger slow cooker, combine remaining ingredients, except salt, croutons and chives. Add hot broth mixture.
2. Cover and cook on high 3 1/2 to 4 hours or low 7 to 8 hours, until peas have broken down and soup is thickened. Stir in salt. Discard bay leaves.
3. Ladle into bowls. Garnish with croutons and snipped fresh chives.
