 Post subject: MEXICAN CHICKEN CASSEROLE

Ingredients

Doritos (the tortilla kind) or Tortilla Chips
Shredded cheese (I use Colby/Monterey Jack)
1 can cream of chicken
1 can cream of mushroom
1 can rotel (mild or original) depends on how spicy you want it
around three chicken breasts or you can use dark meat

Directions

Boil chicken breasts until done. Preheat oven to 375. Mix cut up chicken in bowl with rotel, cream of chicken, and cream of mushroom. Layer casserole dish with a layer doritos and shredded cheese. Add ingredients from bowl on top of that layer. Add another layer doritos. I usually cook until casserole gets hot (about 25 or 30 minutes) and the last 5 minutes I put cheese on the top so the cheese doesn't burn.

Hopefully I haven't missed a step and my instructions are easy.

Oh God I love making casseroles like that. I experiment with casseroles all the time. I do a similar casserole that has hamburger and Doritos, and then one with flour tortillas. There's also a green chile chicken casserole I've done with tortilla chips....

Ok, so now i'm hungry! :D

Oh, I almost forgot some people add half an onion to the filling in the casserole. I forgot that ingredient, because sometimes I don't use it.
